The idea of origin in terms of space and culture as a special indicator of quality is one of the most influential strands in contemporary food. It impacts on politics, economics and everyday life – and it connects these fields with complex relations of power and culture. With geographical indications, the EU offers an instrument which allows for the declaration of specialties, qualified by their tradition, as typical for a defined area. The declaration serves to protect these products as intellectual and collective property and presents them as culinary heritage, thereby enabling sale at an added value. Accordingly, the EU instrument of geographical indications evokes the interests of a variety of disciplines, such as (agricultural) economics, (social) geography, sociology, anthropology and law. Nonetheless, dialogue and cooperation among the disciplines are quite rare. “Taste | Power | Tradition” gives an insight into this multidisciplinary debate and brings together empirical data and theoretical reflections from different perspectives.

Maurizio Canavari is Associate Professor of Agricultural Economics and Rural Ap- praisal since October 1, 2005. He holds the doctoral degree in “Appraisal and Land Economics” (University of Padua). Current research interests range from marketing of quality agri-food products, consumer preference and willingness to pay for spe- cific quality attributes, management in the agri-food industry, quality certification, and adoption of innovations in agriculture.

Adriana L. de Souza holds a PhD in Agricultural Economics and Policy and Food at the Department DEIAgra – Faculty of Agriculture of Bologna. XXIV. Alma Ma- ter Studiorum-Università di Bologna. Current research interests: geographical in- dications (GIs), rural development and cultural identity. Participation in a project aimed at developing a network with public and private stakeholders for human and natural resource value-enhancement of Vale do café Fluminense, Valença, Brasil.

Andréa Cristina Dörr is Professor at the Universidade Federal de Santa Maria (Bra- zil) and coordinator of the Program of Rural Extension for post-graduate students at the same university. She holds a University Degree in Economics of the Uni- versidade Federal de Santa Maria, a Master Degree in Applied Economics of the Universidade de São Paulo (Brazil) and a Ph.D. in Economics of the University of Hannover (Germany). Furthermore she is expert of the Interdisciplinary Research Group in Cultural Sciences of the University of Goettingen.

Laurent Sébastien Fournier is a lecturer in social and cultural anthropology at the University of Aix-Marseille (France) and a member of the Institut d’Ethnologie Mé- diterranéenne, Européenne et Comparative (IDEMEC UMR 7307 CNRS-AMU). His works concern the politics of cultural heritage and the anthropology of Europe.

Jaqueline Carla Guse studied at the Universidade Federal de Santa Maria (Brazil) and is co-author of many publications under the supervision of Professor Doerr. Currently she works at Universidade Regional de Blumenau (Brazil), where she publishes in the fields of financial economics, business economics and business administration.

Raymond H. Hawkins-Mofokeng is a PhD candidate in Agricultural Economics from 01/2014 to 12/2016. He holds the Master’s Degree of Technology in Marketing (Durban University of Technology). Current research interests range from marketing management, strategic marketing of agricultural-food products and agribusinesses (SMEs), geographical indications (GIs), value-chain governance, consumer behaviour, preference and willingness to pay, qualitative research techniques, rural development, and cultural studies.

Greta Leonhardt is a Master’s student of Agricultural Sciences with focus on Agribusiness at the Georg-August-University Göttingen. She did her Bachelor at the Department of Agricultural Economics and Rural Development; the title of her work is the following: Marketing of Authentic Products. The Odenwälder Breakfast Cheese.

Raúl Matta is research fellow at the Institute of Cultural Anthropology/European Ethnology at the Georg-August-University Göttingen and initiated and also leads the DFG Project “Food as Cultural Heritage.” He holds a Ph.D. in Sociology from the University of Paris – Sorbonne Nouvelle (2009). His research interests, reflected in various journal articles and book chapters, include food studies, the anthropology of cultural heritage, and urban sociology.

Sarah May is a Postdoctoral Researcher at the Institute for Cultural Anthropology and European Ethnology in Freiburg. Embedded in the interdisciplinary Research Group on Cultural Property, she wrote her Ph.D. thesis at the Institute of Empirical Cultural Science in Tübingen. Based on her ethnographic research on geographical indications in a comparative setting of Italian and German cheese labeled with the protected designation of origin (PDO), she focuses on structures of governance and negotiation as well as on interests, conflicts, and transformations from so-called “traditional” food into legally, politically, and culturally established common goods.

Karine Michel is a postdoctoral fellow of the Institut d’Ethnologie Méditerranéenne, Européenne et Comparative (IDEMEC UMR 7307 CNRS-AMU). She has completed her PhD in Social and Cultural Anthropology at the University of Aix- Marseille (France). Her works concern Jewish culture in East-Germany and the anthropology of food in the Mediterranean.

Fabio Parasecoli is Associate Professor and Director of Food Studies Initiatives at The New School, New York. His research focuses on the intersection of food, media, and politics, further on intellectual property and food design.

Paulo V. Piva Hartmann currently works as the manager of a private group in agricultural business. He holds the Master’s Degree in Horticultural Sciences (University of Bologna). Current research interests range from administration, marketing management, strategic marketing of agricultural-food products and agribusinesses (SMEs), geographical indications (GIs), rural development and sustainability.

Ivana Radić is a PhD candidate in the Eramsus Mundus program AgTraIn (Agricultural Transformation by Innovation) since 10/2013. She holds a Master’s Degree from the Erasmus Mundus International Master in Horticultural Sciences jointly offered by University of Bologna, Technical University Munich, and University of Natural Resources and Life Sciences, Vienna, with an overall grade 110/110 cum laude. Research interest in marketing of agricultural-food products, small-scale producers, consumers’ willingness to pay, geographical indications, biodiversity, quality products, qualitative research methods. Speaks Serbian, English, French, Italian and Spanish.

Marivane Vestena Rossato holds a University Degree in Accounting and a Master’s Degree in Engineering of Production, both from the University of Santa Maria, Brazil, where she also lectured at the Dept. of Accounting from 1998 to 2003. In 2006 she obtained the PhD in Economic of the Federal University of Viçosa, Brazil.

Katia Laura Sidali is affiliated researcher at the Georg-August-University of Göttingen, Dept. of Agricultural Economics, Institute of Marketing of Food and Agricultural Products (Germany). She took her PhD in a joint doctoral program between the Almamater Studiorum University of Bologna (Italy) and the G-A-University of Göttingen. Her research focuses on marketing of food, certification schemes and tourism destination, consumer behaviour and collective action in conventional and alternative agro-industrial supply-chains. Her research appears in many scientific peer-reviewed journals such as Journal of Sustainable Tourism, British Food Journal, Journal of Global Marketing Science, and Journal of the World Intellectual Property Organization.

Achim Spiller is a Professor of Food Marketing at the Department of Agricultural Economics and Rural Development, Georg-August-University of Göttingen, Germany. His main research areas are food quality and safety, branding/labelling, management in agribusiness, consumer behavior, organic food, and animal welfare. Achim Spiller is elected member of the Göttingen Academy of Sciences and Humanities and a member of the scientific council “Agricultural Policies, Nutrition and Consumer Protection” with the Federal Ministry of Food and Agriculture.

Bernhard Tschofen is a Professor of Popular Culture Studies at the University of Zurich. From 2004 to 2013, he served as a Professor for Historical and Cultural Anthropology at the University of Tübingen. His research and teaching specializations include the interface between the everyday and knowledge culture (in tourism, cultural heritage, and museums), as well as spatio-cultural questions in both the past and the present.

Gisela Welz is Professor of Cultural Anthropology and European Ethnology at Goethe University Frankfurt/Main, Germany. Many of her publications and research projects address issues of Europeanization. Her most recent book “European Products: Making and Unmaking Heritage in Cyprus” (2015) inquires into the effects of an increasingly standardized heritage regime on food practices.

Rungsaran Wongprawmas obtained a PhD degree in Agricultural, Environmental and Food Science and Technology from Alma Mater Studiorum-University of Bolo- gna in June 2014. Current research interests are agri-food marketing, quality/safety products, functional food and healthy diet. Her focus is on consumer behavior and preferences applying stated and revealed preference approaches, e.g. choice modelling, and experimental auctions.
